Introducing our McCabe's Coffee Spring Special
The Vanilla Matcha Latte
Spring is finally upon us, which means brighter days, brighter moods, and less dreary weather will be coming soon (fingers crossed...).
To celebrate the season, we took a brief step away from the coffee beans to put together something new.
Balancing the rich and earthy flavours of matcha with that familiar, comforting sweetness of vanilla—the vanilla matcha latte is a delicious and incredibly versatile drink, enjoyed both hot and cold.
Our recipe covers how you can make it both ways. So you'll be able to switch between the warm and cosy vanilla matcha lattes needed for those crisp, early spring mornings, and the cool, refreshing iced version for those late spring sunny afternoons.

How to Make It
Ingredients:
- 8g – Koyu Matcha Latte Powder
- 10ml (One pump) – Monin’s Vanilla Syrup
- 250ml – Milk of choice – (We’d recommend whole or oat milk)
- 30ml – Hot water – (Around 80°C)
Optional:
- Ice cubes – (If planning to make an iced vanilla matcha latte)
Step-by-Step Guide
How to prepare your matcha:
1. Sift 8g Koyu Matcha Latte Powder into a heatproof jug or small bowl.
To remove any large or grainy clumps that might be difficult to whisk away.
2. Pour 30ml hot water over matcha powder.
Around 80°C is the ideal temperature. Do not use ‘boiling hot’ water – which can burn your matcha and leave it tasting bitter.
3. Whisk together vigorously until smooth and slightly frothy.
Use a traditional bamboo matcha whisk if you have it, but a regular small whisk will also work just fine. A handheld milk frother can also work well to achieve the desired consistency.
For a hot vanilla matcha latte:
4. Heat and gently froth your milk.
Aim for around 65°C in temperature with a smooth and glossy texture.
5. Bring it all together.
Pump 10ml of Monin’s vanilla syrup into a serving mug and add your matcha. Stir to combine.
6. Add your milk and serve.
Pour steamed milk over the vanilla matcha mixture like you would for a regular latte and enjoy your perfect vanilla matcha latte.

For an iced vanilla matcha latte:
4. Chill your matcha.
Place your prepared matcha in the fridge for a few minutes until it’s cold.
5. Bring it all together.
Fill a tall serving glass with ice cubes, then pump in 10ml of Monin’s vanilla syrup. Add ‘cold’ milk (leaving enough room to add matcha) and stir to combine.
6. Add your matcha and serve.
Pour your chilled matcha slowly over the vanilla milk mixture for a beautiful layered aesthetic, before stirring in. Enjoy your perfect iced vanilla matcha latte.
